There is nothing more rewarding than seeing your child’s eyes light up on their birthday. My little daughter, a true believer of all things princess and pink, has been this way for as long as I can remember. She wears her Disney dresses to bed and denies any colour that isn't pink! So when I asked her what kind of cake she wanted for her 3rd birthday, her answer was immediate and absolute: “A PINK princess!” And without hesitation, she pointed straight to Rapunzel.
As a baker and a mum, this was a challenge I joyfully accepted. I wanted to create more than just a cake as I always try to; I wanted to build her a memory. This is the story of how I brought her Rapunzel dream to life with a full "Masterpiece Set" of bespoke desserts, all made with the light, refined Japanese touch that defines CouCou Natsuha.
“At Last I See the Light“

From the moment you stepped into the room, you were transported into Rapunzel's enchanted world. The party was decorated in shades of lilac and soft pink, echoing her famous dress. Baloon & Honeycomb decorations adorned the walls, and a beautiful banner bearing Rapunzel’s golden sun symbol hung above the dessert table.
On a small, lovely round table sat the entire edible fairytale. There were lovely fairy cupcakes, each decorated with delicate & silky buttercream flowers in three different designs. Standing proudly beside them were the matching hand-iced biscuits: one in the shape of Rapunzel’s dress, one a silhouette of the iconic Disneyland castle, and one a number '3' complete with a magic stick, hinting at the Disney magic.

Nearby stood a whimsical tower—not of stone nor bricks, but made of fluffy, light sugar donuts! And finally, the centrepiece: our royal, beloved Princess Rapunzel. She stood tall as a beautiful doll cake, made from delicious two-layer mousse with a stunning, hand-iced biscuit topper of the princess herself.
“Flower, Gleam and Glow“

The princess cake itself was made from two layers of delicious mousse: a light rare cheesecake mousse and a vibrant raspberry mousse. This combination is a signature of mine and has the highest repeat-order rate from my clients—it's a perfect balance of creamy and tart, light and satisfying.

The dress frills were piped with fresh whipped cream—a classic Japanese style that is much lighter than heavy fondant or buttercream. To colour the cream, I used homemade purées of stewed raspberries and blueberries, which added an extra layer of real fruit flavour.

I always love the challenge of designing a princess cake, but this one was personal. Since my daughter adores pink, I made a creative decision to shift the design's colour palette. Instead of Rapunzel's traditional purple, I made this dress decidedly pink-heavy, just for her.

The topper, of course, was Rapunzel. She was entirely bespoked with an hand-iced biscuit. My favourite detail was her rich blonde hair, which I adorned with tiny, meticulously piped flowers and ribbons in the softest pastel colours.

My other point of pride is the "semi-3D" construction; I built her just like dressing a real doll, which gives the biscuit a wonderful depth, making it feel more like a realistic figure.
A Donut Tower

I must admit, the most challenging part of this entire setup was Rapunzel's donut tower! To ensure they were perfectly fluffy and delicious for the children, I woke up VERY early on the day of the party to make the yeast donuts from scratch.
The little triangle roof at the top was also handmade. To complete the look, I arranged a beautiful ring of flowers at the base of the tower, reminiscent of the flowers surrounding her home in the story. These donuts are incredibly light and airy; they simply disappear in your mouth, making them a huge hit.

Unfortunately, due to their very short shelf-life and the logistics of making them fresh, the donut tower isn't something I can offer commercially. However, for my wonderful repeat customers, I sometimes include a few as a special bonus when the timing works out ;)

Let Your Power Shine

Accompanying the main cake were these beautiful buttercream flower "fairy cakes." I used my signature silky Italian meringue buttercream to pipe delicate petals, one by one, creating pale pink and light purple roses and hydrangeas.

The CouCou Natsuha buttercream is famous for being light, silky, and much less sweet than traditional frostings, making it a favourite for both children and adults. These elegant flower cupcakes are also one of my most popular offerings for engagement parties and bridal showers.

Three types of original-design iced biscuits helped bring the rest of the dessert table to life.
There was the Cinderella castle silhouette and the number '3' biscuit, which I decorated with a magic wand to remind us all to "never stop dreaming."

The third design, Rapunzel’s dress, was my daughter's second-favourite item on the entire table. She held the biscuit up to her own princess dress and, with the biggest smile, said, "Same! Same!" (「おんなじー！」).

An Extra Cut…
3歳おめでとう♡
A doll cake, a Rapunzel biscuit topper, three types of Disney-themed biscuits, a tower of fresh-made sugar donuts, and intricate Italian meringue flower fairycakes. It was a full spread, and I made every single piece of it alone. Working full-time, this meant many late nights of prep and baking after my daughter was fast asleep.
After all that effort, all that meticulous work, do you know what her absolute favourite part was?
It was the Rapunzel iced biscuit topper.

I had made it on a stick, like a lollipop. When it was time for cake, she held it in her hand for the longest time. She just looked at it, used it for make-believe play, showed it to me and her dad, and gave it a tiny lick... and then, just as she’d pretend to take a big bite, she’d stop, giggle charmingly and just keep holding it.
Watching her cherish it like that, with that adorable, mischievous smile, made every tired, late-night hour worth it. My heart just melted.
